Great Eats in Plaquemines Parish Louisiana

The Cajun individuals living in Plaquemines Parish are descendants of some of the first settlers from foreign lands to make their way to American soil. These were the French Acadians that settled in an area recognized as New France back in the 1500s. These individuals laid claim to a huge wilderness as far west as the Rocky Mountains, up to the Hudson Bay, and into Florida. It was their unique culture and style of dining that is now referred to as Cajun cuisine.

Today, the largest congregation of Cajuns lives along the Louisiana coastline. Their unique cuisine is desired by people from all over the world. They enjoy their spices, and rely heavily on chili powders, paprika and staple aromatics that include garlic, carrots, celery and onions. These individuals have always used every component of available animals in their recipes.

At about the same time of their arrival in what would become Plaquemines Parish, individuals arrived along the Louisiana coastline from the Caribbean islands. These people brought with them their Creole style of cooking with recipes. Just like today, they relied on the available local fish, wild game, grains and vegetables.

Plaquemines Parish is one of the unique places along the Gulf of Mexico coastline where visitors and residents can enjoy both styles of Louisiana cuisine. From Cajun catfish to Creole shrimp, the wild spices and delectable dishes are celebrated in local festivals year round. The restaurants in the area offer crawfish boils and Louisiana jambalaya made with the perfect mixture of southern spices.

The restaurants in the parish offer dishes filled with complex formulas. Located in Plaquemine Louisiana, Carbo’s offers traditional Andouille sausage with crawfish, crawfish étouffée, shrimp Creole, red beans and rice with traditional smoked sausage, and other dishes.

Shrimp Creole Omelets
Living along the Louisiana coastline offers its privileges to many of the local residents. It is one of the few places on the planet to enjoy shrimp and grits, and shrimp Creole omelets at Fat Daddy’s in Plaquemines Parish. They also offer a wide assortment of po’boy sandwiches as well.

Creole Red Beans and Rice
Using the finest Andouille sausage, pickled meat, and smoky Creole spices, Plaquemines Parish is one of the only places on earth to find authentic Creole red beans and rice. The meat is rendered until it is slightly browned, and allowed to simmer for hours, causing it to simply melt in the mouth. With the rich addition of Creole seasoning, jalapeno pepper, garlic, bell peppers, onions and hot sauce, it is truly one of the treats of the parish.

Restaurants in the area are also known for their variety of jambalaya recipes. This includes chicken and Andouille sausage, along with crawfish and tasso, and shrimp and chicken. Natives in the area enjoy tasso, which in the olden days was a seasoned smoked meat, made from pork trimmings that were dried, heavily seasoned, and left in the smokehouse for hours. Today’s Tasso is more in the style of ham, but is still heavily seasoned and smoked for hours. It is one of the rare treats enjoyed in Plaquemines, along with other parishes along the Louisiana coastline.

There are only a few places in the world where alligator meat is on nearly every menu at the local restaurants. However, in Cajun country, Plaquemines Parish residents understand how healthy alligator meat is. Free of cholesterol and saturated fats, alligator is ideal for sautéing, grilling or frying.
